I can’t believe it’s Wednesday already! My daughter, Liana, is going on a camping trip this weekend with the neighbourhood kids. They are completely roughing it, no camper, no cottage, no showers, no electricity and sleeping in tents. One of the kids had to back out of the trip and they are down to one vehicle and unfortunately each of them will have to reduce the amount of gear they were planning to bring.
I thought I would prepare a few little goodies for their trip and I have been baking away. I’ll share the recipes over the next few days. I wanted to make something they could grab for breakfast. My sister stopped by the other day with a bag full of chocolate chip Belgian waffles and they were gone within minutes. All the kids love them and I thought they would be perfect.
These waffles are not your typical breakfast waffle. They are very light but a tad denser than the regular waffle. They are meant to be served plain or lightly dusted with confectioners’ sugar. In fact in Belgium they are served just that way and are a typical street food for Belgians. They are absolutely amazing served warm right from the waffle iron but they are just as good cold.
These will be perfect for the camping trip, the kids can warm them over the campfire and if they so desire they can top with syrup and fresh fruit or they can simply eat them plain.
I added chocolate chips but you could also omit the chips and add the zest and the juice of a lemon to give the waffles a different flavour dimension. You could also add fresh blueberries, raspberries or strawberries.
This recipe makes quite a few and if I am fast enough I usually freeze (they freeze beautifully) half the batch to be enjoyed at a later date. These waffles are a family favourite and are treated more like a snack to have with a cold glass of milk or served with tea or coffee.
Whatever way you choose to prepare or serve I know you will enjoy!
If you love chocolate for breakfast you may also want to try Chocolate French Toast, truly decadent!
Chocolate Chip Belgian Waffles
*Special Equipment – Waffle Iron
- 4 cups flour, sifted twice
- 2 teaspoons baking powder, sifted twice
- 10 eggs
- 2 cups sugar
- 1/2 cup vegetable oil
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla
- 1 cup chocolate chips, semi-sweet or bitter-sweet
- Preheat waffle iron according to manufacturer’s instructions.
- Using a fine-mesh sieve, sift the flour and baking powder into a medium bowl. Sift one additional time. Using a whisk, stir to combine well. Set aside.
- Place the eggs and sugar into the bowl of a stand mixer. Using the paddle attachment, beat the eggs and sugar on medium-high speed for 6 to 8 minutes, until quite pale.
- Add the vegetable oil and butter and continue to beat on medium-high speed for 2 minutes. Add the vanilla extract and beat just to combine.
- Reduce to speed to low and gradually add flour, beat to just combine. Do not over-mix!
- Using a large spatula, fold in chocolate chips.
- Coat the waffle iron with non-stick cooking spray. Using a ladle, pour enough batter in iron to just cover waffle grid. Close and bake following manufacturer’s instructions until golden brown, 2 to 3 minutes.

YUM! Every time I see a waffle recipe it reminds me that I need a waffle iron! I’ve never had one – I guess they’re not that popular in Australia but I must look out for one. These look delicious!

This is so funny – we just made pancakes this morning. I don’t think our pancakes hold a candle to your waffles though. These look like a great way to start the day!

Hey Grace,
Unfortunately I don’t have a waffle iron so I probably won’t be making these but they look really good! I am not normally a waffle fan but when I travelled to Belgium and had them right from a cart sold on the street, I was sold! There is nothing like those waffles. They were sweet and a bit sticky – so perfect! I could taste it now! Thanks for bringing back such a great food memory.

Stacey I am green with envy. I was born in Belgium and have yet to go back. I have been trying to convince the kids for a few years that it would be an amazing trip, they think we will be museum hopping. Hoping to go back next summer. Mr parents quite enjoyed living in Belgium. Happy it brought you back to a happy memory, funny how food can do that.

I am a little amazed Liana is roughing it this weekend, she’s really a 5 star girl, hoping the waffles will give her a little comfort, she’s definitely going to need it!
